Tea and Fruitcake

We don't usually think of fruit cake in April since it is traditionally a Christmas sweet, but I wasn't feeling well enough to bake in November or December. Now I wanted to use up the dried and candied fruit which has been taking up space in our extra refrigerator.
I always watch Anna Olsen's baking series and she demonstrated making your own candied orange peel and used it in a fruit cake.
It all looked so delicious, and the result proved it! The peel is so fragrant and adds a fresh flavour to the cake.

Beautiful result! Sorry to hear you weren't feeling well but are now feeling good enough to bake...
Dear Millie,
I'm so happy to have you join me once again! I have been wondering how you are. {I have you on my prayer list and I have been praying every day for you.} Your fruit cake looks beautiful. I still have a few slices of my Sultana cake left from Christmas. That is one of the things I appreciate about fruit cake, is that they get better and better even months later. I haven't tried any of Anna's recipes although I do know who she is. I don't get her show. Thanks so much for sharing and enjoy the rest of your day.

Blessings,
Sandi

Welcome back Millie! I had just sent a comment to you in your last post this morning to see how you are. I'm glad you are doing much better now. I'm not a fruit cake maker and don't eat it much either. Take care and enjoy the spring days. Blessings, Pam
